I don't know how much a boss has, but yes, it depends on profession, and level. Each boss has their own energy and health levels, so don't think they all have the same amount.
I've seen bosses run low on energy (Monk bosses) and they attack until they have enough energy to heal themselves.
I have not used things like Mind Burn nor Mind Rack (because I don't use energy denial), so I cannot confirm them going down to 0 energy.

a warrior boss would have 20 energy,ranger 25..ect but casters have staves and its hard to predict how much

Well from some calculations a friend of mine did, he says that ele bosses have the largest pool (obviously) but it is huge (200+). From the caster bosses in the south shiverpeaks most have a basic pool over 100 with 10 energy regeneration, which is why some can keep up bonds (holy wrath, retribution, ect) and still spam 10 and 15 energy spells all day long, even with energy denial. But this is just a friends estimate from what he calculated, and i belive it, cause there is no way an ele boss with even 200 base energy could continue to spam exhaustion causeing spells and never stop, like thouse dragons in the jade sea, evey spell they have casues exhaustion, and they never stop casting. Well thats just my thoughts, it sorta agrivatees me too that they have a virtualy unlimited eng pool, but we skill kill them anyways so its not like it matters that much

It's limited, but it is VERY, VERY, LARGE. Monsters in this game have ub3r l337 h4x (Fingers of Chaos anyone?).

It's obvious that monsters will have more energy than PC's. But what they have an advantage in energy is balanced by the fact that they are exactly smart with it. I'm nto talking about wasting energy most fo the time its not using skills when needed but in unneeded spots. Also they are disadvantaged because they only have roughly 3-5 skills whereas we have 8 per player. That's 64 skills between 8 people. If you face a boss group with an average of 3.5 skills between a mob of lets say 13. 13x3.5= 45.5 skills. So roughly 46 skills. 64-46=18. So as PC"s we have a 18 skill difference. PCs vs any mob will generally have more skills giving the overall advantage to us. So a monsters/boss' energy doesn't matter to us - unless your e-denial but that's rarely used in PvE anyway [not saying its bad for PvE just not all that common]-.
